Clean Eating: Banana Muffins

January 24, 2013

Our family always has a few ripened bananas by the end of the week so I make use of them to create my husband and sons favorite snack: miniature banana muffins! I love them because they are only around 50 calories each and 12grams of carbs (give or take). I’ve been asked to post this recipe for some time so I apologize for the delay! Just to let everyone know… you can substitute anything to make this more gluten or…

Clean Eating: Grain-Free Peanut Butter Chocolate Chip Cookie

January 22, 2013

A reader, Tabitha, posted this recipe on my Facebook timeline and it intrigued me. Why? Because there’s no flour involved! It literally only has 7 ingredients to the recipe. The Main ingredient??? CHICKPEAS! I made it in a food processor and it took just minutes to make. My only deal is that the dough comes out more ‘wet’ than what I am used to, especially compared to the Vegan Chocolate Chip Cookies I had made minutes earlier. (when my baking…

Healthy Eating: Vegan Chocolate Chip Cookies

January 22, 2013

I love to bake and I have all the ingredients for most anything in my cupboard. Today, I decided to bake something mildly healthy since I’m still on a celebratory eating holiday (for two days) after completing my various shoots this weekend. I did some research and found THIS recipe. It was very easy to make. It turned out pretty good – definitely doesn’t taste like a real chocolate chip cookie as it lacks the buttery and sweet taste I’m…

a Non-Runner’s Running Advice

January 11, 2013

I always “hated” running. Whenever I think of it, I think of my 7th grade P.E. teach, Mr. Parker, who seemed to favor the athletes in class, versus the mediocre students (so I thought) like myself.  We were required to run a mile weekly and I remember the entire class dreading “The Mile” when the time approached.  I can still hear Mr. Parker’s British accent saying, “Stop saying we are running “the” mile today. We are running “a” mile”. I…

How to weigh yourself.

January 8, 2013

I weigh myself once a week, in the bathroom, nearly naked, right when I wake up in the morning. I also ensure that I had my ‘cheat meal’ at least 3 days ago (to make sure the bloat went away) and I’m not retaining water due to excess salt, PMS, or stress. I found that my best ‘weight’ days are when I had adequate sleep and didn’t eat a heavy dinner the night before. So since my weekends are sprinkled…

Clean Eating: Spaghetti Squash

January 7, 2013

This past holiday I had dinner at my husband’s family’s house and they served spaghetti squash (in addition to regular spaghetti). It was the FIRST time I ever tried it. I always saw it pictured somewhere on the internet but I was always too intimidated to try it. Little did I know how really easy it is to make! All they did was cut it in half, puncture the squash and place it in the microwave for around ten minutes.…

Fitness Role Model: Alma Gutierrez

January 3, 2013

Last year I developed a strong friendship with a former acquaintance named Alma Gutierrez. I met her a couple years ago while she was a child care provider. She joined my local mom-me fitness group a couple years ago when she was on play date with the boys she was caring for. She saw a bunch of moms doing lunges and squats at the park. One of our mothers asked, “Would you like to join us?” Alma said, “No, it’s…

Living a No Excuse Lifestyle

December 28, 2012

Disclaimer: You should consult your physician or other health care professional before starting this or any other fitness program as well as making any nutritional changes in order to determine if it is right for your needs. Opening thoughts: In Scott Peck’s opening statement of his famous book, “The Road Less Traveled”  he writes: ‘Life is difficult.’ It is not meant to be easy – and if you think this “No Excuse Plan” is going to be a cake-walk…

Can I break all the rules – and still compete?

December 21, 2012

This was not an easy shot to take. Firstly, that’s a tough stretch. Secondly, I’m balancing on a bosu ball. Thirdly, I am pressing a camera button. Lastly, and most importantly, I trained after a long day and little sleep at 9pm. —- When I competed in the past I didn’t have a serious income. I was living at home with my parents. I didn’t have children. I had money I could use for travel, fashion and supplementation. I had…

Fat Loss Supps FAQ’s!

December 21, 2012

I get so many questions about supplements and to be honest, I have ALWAYS been terrible at taking supplements. The only way I take them if it’s shaped like a gummy bear and coated with sugar! LOL. When I’m more serious about training, I WILL try to be more disciplined about taking a multivitamin and sometimes glutamine (Max Muscle brand) for muscle recovery and a fat burner for mainly energy. There are a lot of Fat Loss supplements out there…
