I made Spinach Protein Pancakes the other week and on a scale from 1-10, they were around a 7. When I first saw a picture of the pancakes on a streaming wall on Facebook, I was instantly driven to make them! They looked so fluffy, healthy and delicious. I’ve made protein pancakes in the past and they always turned out flat, tasteless and floppy. I DO have to say that these pancakes are still very much like other protein pancakes but it has a little extra punch because of its various ingredients.
What I love about these pancakes is that it incorporated spinach. I also like how they entire recipe is just 268 calories! It was very filling and could only consume 1/2 the recipe. I added some Agave Nectar on top and berries. If you would like to try it and tell me what you think, here is the recipe:
1/4 cup gluten-free oats
1/4 cup nonfat greek yogurt
1/4 cup egg whites
1/4 cup vanilla or chocolate protein powder
1/4 or 1/2 cup almond milk
2 cups fresh spinach
cinnamon to tasteDirections:Add all ingredients into your VitaMix or blender and blend on a lower speed for 30 seconds-1 min. until spinach is finely chopped.
Pour onto a lightly oiled nonstick skillet, 3 Tbsp. at a time.
Flip when bubbles form, about 3 minutes per side.
Keep warm in the oven while you cook the remainder of the batter.
Top with Earth Balance or butter and maple syrup.
