Clean Eating: Mango Salsa

I love salsa! You can eat it with a-n-y-t-h-i-n-g! You can eat it with your eggs, fish, chicken…since I had an excess amount of tomatoes from a BBQ on Saturday (and since my husband bought the really big bag of tortilla chips from Costco) I decided to make salsa for the first time! I usually buy it, but I knew it was easy to make but am usually not inspired until I have the ingredients. I had a lot of tomatoes so I doubled this recipe and added chiles (2) and while it didn’t seem like a lot, OMG, it was like a firecracker in my mouth every time I took a bit (I’m not a big spice person). If I could change anything I would cut back on the vinegar by a tad.

Fresh Mango Salsa Recipe

  • 2 cups diced Roma tomatoes
  • 1 1/2 cups diced mango
  • 1/2 cup diced onion
  • 1 teaspoon white sugar
  • 1/2 cup chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • tablespoon cider vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
