Clean Eating: Black Rice the “new” brown?

My  husband has been eating a lot of black rice lately. He buys it in bulk at Costco. I was originally introduced to black rice over ten years ago while living in San Francisco. It was very interesting as it is very dark, sometimes looks purple and has the texture of brown rice.

I love eating it today (we have it cooked and stored in the refrigerator at all times – that and quinoa). I often eat it in the morning with my egg whites or with salmon.

It has been compared to brown rice (which I also eat) but apparently has even MORE good stuff. It has more antioxidants than brown. Due to its dark color, it has the same health benefits that give blueberries and blackberries its color. One of its main antioxidants, anthocyanin, helps fight heart disease and cancer.

You can purchase it at Costco for around $6 for five pounds.

I made this dinner of salmon, black rice and roasted brussel sprouts this evening.
