Clean Eating: Turkey Meatballs

This recipe is delicious! It’s very easy to make. I actually make meatballs quite often so I’ve expanded on the basic recipe found below. I added actual wheat bread (2) cut into little squares so it stuck together better, I also added spinach and some parmesan for my boys. Half the batch I brown using olive oil on the stove, the other I place in little muffin tins and bake in the oven. (This is how you cook for both your family and yourself!) The meatballs are quite tasty so I usually don’t have to add tomato paste or sauce over it. Enjoy!!!!

Low-Fat Turkey Meatballs

1/2 lb all white meat lean ground turkey
1/2 yellow onion (finely chopped)
1/4 cup parsley (finely chopped)
2 garlic cloves
1/2 teaspoon oregano
1 egg
1/2 cup dried Italian seasoned breadcrumbs
1/2 teaspoon salt
1/2 teaspoon pepper
olive oil (for browning meatballs, not in mixture)Directions:1
Beat egg in large bowl.
Add all remaining ingredients.
Mush together well using your hands.
Form into 1/2 inch balls.
Heat small amount of olive oil (about 1 tsp to keep this recipe low-fat) in skillet.
Put half the balls into the skillet and cook until browned evenly on outside.
Remove and add remaining balls.

**** MOST RECENTLY I’ve been putting them in mini cupcake tins. It makes around 50 little balls. I cook it a 350 degrees for fifteen minutes.
