Clean Eating: Raw Brownies

Raw Brownie (more like fudge). I took this on my iphone so it’s blurry.

I found this recipe in the July 2012 issue of “O” Magazine. I love it because:

– It doesn’t require baking
– Has no processed sugars
– Has less than 7 ingredients
– Is Healthy!!!!

Base:
2 cups walnuts or pecans
13 ounces pitted dates
1/8 tsp coarse sea salt
2 tsp vanilla extract
1 avocado pitted and peeled
1/2 c raw cocoa powder

Frosting:
3 avocados, pitted and peeled
1/8 tsp sea salt
1/2 c raw cocoa powder
1/2 c raw agave nectar, plus more to taste

Directions:
In a food processor, mix all base ingredients, then pat down in an 8 in square baking pan. Puree all frosting ingredients in a food processor and spread on base. Cover and freese at least 3 hrs. Cut into 2 in squares and serve cold.

Makes 16 Browines.
Active time: 40 minutes
Total time: 3 hours and 40 minutes

It took me about 10 minutes to make this in my Vitamix. You can also use any food processor. I’ve always veered towards a more raw cuisine as I honestly believe my body responds best to a more ‘paleo-like’ diet (eating foods hunters and gatherers ate…which is most often raw and unprocessed) I made it around 11pm last night and had something morning and it was dee-lish!! The true taste-test, my husband, said he liked it! I haven’t tried my sons yet but I’m realizing that I need to start refining their taste buds more. Since they indulge in birthday cakes and candies during the holiday seasons I know they will find ‘my chocolate’ too bitter (even though it really isn’t).

That’s my goal also as I continue my quest to eat better – is to really be aware of the sugar in my children’s diet and continue introducing real sugar and real food to them! I cut out all juice and fruit snacks last year. They’ve never tasted soda (in my presence) and we don’t keep any sugary cereals in the house. Most of the snacks I pack are fruits, trail mix and crackers. Most of the desserts they eat are my banana muffins, zucchini brownies, vegan cookies and now raw brownie!

      No, I don’t. It should be easy to input on an online nutritional calculator…
