Clean Eating: Paleo Almond Butter Cookies

Check out these Paleo Almond Butter Cookies! emoji They were so simple, yummy and kid approved! I found the image initially on Pinterest (I’m not really an active user on there) and followed the recipe to this awesome website. 

It only takes about 3o minutes to make (10 minutes baking time). The boys helped me in the mixing process (they love getting involved) and when it came out of the oven, I was initially apprehensive because it didn’t have any flour, butter or processed sugars – even our vegan cookies have sugar! – but it tasted pretty good. I must admit it took at least two cookies for me to really get used to the taste (as there is only a hint of sweetness) but after that it became addicting for me, my husband and my boys.

FYI: If you want to make these sweeter, just add a little more honey.

Ingredients:

– 1 large egg
– 1 cup unsweetened almond butter
– 1/3 c raw honey, 1 teaspoon vanilla
– 2 tablespoons cocoa powder
– 1/4 c almond flour
– 1/4 teaspoon baking soda
– kosher salt for sprinkling

Preheat oven to 350.  As in ALL baking recipes, mix all the wet ingredients first, then the dry. Bake for 10 minutes.

    Us almond flour the same as almond meal flour? I’m having a hard time just finding almond flour..
