You know that feeling when you discovered the most amazing thing in the world and want to share it with everyone? That’s how I feel about this ice cream recipe. I literally JUST made it and feel the need to write a blog post immediately about it!
Yesterday, while at my mom-me fit club, a couple mothers (Alicia and Melissa to be exact) were talking about a healthy ice cream recipe made out of frozen bananas, peanut butter and milk. Apparently, it tasted like real ice cream AND it was healthy.
This appealed to me because it had less than 5 ingredients, didn’t require me to churn anything and I could make it lactose free! So that evening I cut up three bananas and put it in the freezer overnight. Tonight, after cooking dinner I placed them in our Vitamix with 2 whopping tablespoons of creamy peanut butter. I added 1/4 cup of almond milk and Voila! It was done! The moment I tasted it, I was SHOCKED how amazing it tasted and had the same texture as real ice cream! Now, I am considering all the additional things I can add to this concoction…dark chocolate chips? Nuts? The options are endless.
The entire recipe made around 2 cups or so. If you eat 1/2 cup at a time (normal portion size) then it’s only 130 calories, 23g of carbs and 11g of sugar.

I LOVE making this! Ive also added Unsweetened Cocoa or nuts and even different extracts to change up the taste! Its great and if you dont finish it all freezing and reblending it is easy!
