Clean Eating: Eggplant Fries

March 14, 2013

I made Baked Eggplant Fries. I didn’t have panko breadcrumbs so I used a tempura batter mix (I do not know why I have this in my cupboard). It was very simple to make and was very tasty! Hubby LOVED it. The kids….took a little bit to catch on! I found the recipe here. Prep Time: 10 minutes Cook Time: 10 minutes Total Time: 20 minutes Ingredients 1 medium eggplant, cut into 1/4 inch thick ‘fries’ 1/2 cup flour 2…

Do Opposites Attract?

March 4, 2013

Since I introduced my husband (poorly) in my last post, I thought I introduce him or ‘us’ one more time to save me from looking like an unappreciative wife who doesn’t get the sincerity behind my husband’s actions. You will see him time-to-time since he is a man’s man who enjoys shooting, paintball, computer games, obnoxious jokes, political banter and a good movie. At the same time, he’s also a girl’s guy in that he likes listening, providing insight and…

A Husband’s Advice…

March 3, 2013

While driving the other day my husband, David, started talking about a recent Ricki Lake show about the imperfect side of motherhood. Some mothers talked about feeling the pressure to be the quintessential PTA mom, losing your personal identity and being stressed about the responsibilities.  He was inspired to write a blog about, “A Husband’s Advice on the Top 10 things that stress their wives out!” Being a blogger and a mom myself – I personally didn’t want to publish…

How to Start a Mom-me Fitness Group

February 25, 2013

When I was pregnant with my first son, I saw a First 5 Sacramento flyer at our local mall. The flyer encouraged groups targeting children 0-5, to apply for small grants up to $5k. The First 5 Commission receives funds in accordance to Prop 10, which mandated a .50 tax on tobacco products to be used to fund early childhood development programs. Since I was a writer and was already familiar with grant writing via my nonprofit, I decided to…

Mommy Fitness: Sick! Sick! Sick!!!

February 21, 2013

At church on Sunday I started feeling warm. My body felt achy and my head felt heavy. We had a full day planned with business shopping and preparing the care home for furniture arriving on Monday morning. I’m usually a sport when it comes to ‘getting things done’ – regardless of how I’m physically feeling, but I needed to lie down and place blankets over my shivery, achy body. My body temperature was 101.5. Leaving church. Last moment looking cute…

Fitness Role Model: Lori Ann Hare

February 5, 2013

Have you never met someone, but feel like you’ve known him/her your entire life? That’s how I feel about Lori Hare. Some of you know her as the admin of the “2013 No Excuse Mom Challenge”. She is inspiring, motivating and challenging. In January 2006, she emailed me about a question regarding strength training. A book she read advised hour-glass-shaped people to not weight train because of their genetics. I wrote her back (as I usually do eventually) and told…

Mommy Fitness Blog: My Daily Schedule

February 2, 2013

I have a back injury. It’s a re-occurring injury on the left side of my lower back. I think I pulled it while carrying the baby in his carrier one day. After all, I’m often distracted and moving my body in awkward positions doing different things like trying to hold two children’s hands while crossing the street with a heavy baby carrier in tow. For the past couple weeks I’ve been walking around the house with a heating pad strapped to…

Clean Eating: Cauliflower Pizza

January 30, 2013

I’ve been wanting to try Cauliflower crusted pizza for a while. The first time I attempted it I used my Vitamix to make “cauliflower rice” but ended up making it into mush and created cauliflower mashed potatoes that evening instead. I was determined to make this work, so a few days a later I took a cheese grater and grated the cauliflower (making 2 cups worth of cauliflower rice…which means I doubled this recipe below) so I had enough to…

Clean Eating: Turkey Meatloaf

January 30, 2013

I love me some turkey meatloaf! Especially when it’s a high protein meal with hidden vegetables and lots of flavor! My boys especially enjoyed this recipe and managed to eat all of their dinner. It only took 5 minutes to mix all the recipes together then put in a baking dish to bake for one hour. I found the original recipe for this Quaker Oatmeal Prize Winning Meatloaf here. — 1-1/2 pounds lean ground beef or turkey 3/4 cup Quaker®…
