Clean Eating: Triple Chocolate Chunk Muffin

I just made these Triple Chocolate Chunk Muffins today and they were SUPER easy to  make. Took me about ten minutes to mix everything and 30 minutes to bake all of them. I say to ‘bake all of them’ because I used miniature muffin trays, so it took longer to bake. What I love about my mini muffin trays is that each muffin is probably 50 calories because it’s bit size!

So how did it taste?

well – since I bake a lot of sweets all the time it’s definitely not like the real thing. BUT, when you are dieting, anything that has more taste than oatmeal and brown rice tastes amazing! I ran it by my friend Alma and she enjoyed them! I DO have to say, that I used two tablespoons of Stevia and since it wasn’t aspartame or sucralose, I thought it wouldn’t hurt my belly, but it did! I ended up giving the entire batch of cupcakes to Alma.

If you need something sweet to brighten up your diet and don’t have an incredibly sensitive stomach like mine, then try this recipe!


Triple Chocolate Chunk Muffin Knock-Offs of Whole Food’s 6 Dollar per 4 Chocolate Chunk VitaTop Muffins


1 3/4 c oats

  •  3 egg whites
  •  3/4 cup unsweetened cocoa
  • 1/2 cup unsweetened applesauce
  • 1 tsp. vanilla extract
  • 1/2 cup plain Greek yogurt (or regular plain low fat yogurt)
  • 1/2 tsp cream of tartar (or 1-1/2 Tbsp. vinegar)
  • 1-1/2 tsp. baking powder
  • 1-1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup hot water
  • 1 cup sugar substitute (like Splenda granular) OR 1/4 cup + 2 tbs stevia
  • 1/2 cup semi-sweet chocolate chips (or use white chocolate or peanut butter chips!)

Preheat oven to 350 degrees. Line 2 (12-cup) muffin pans with foil cupcake liners, or spray muffin tin with non-stick cooking spray. Set aside.
In a blender, (or food processor), mix all of the ingredients together, except for the chocolate chips. Blend until oats are ground and mixture is smooth.
Place mixture in a bowl and gently stir in 1/2 of the chocolate chips (set the rest aside). Scoop mixture into prepared muffin pans.
Place muffins tins in the oven for 10 minutes.  After 10 minutes, remove muffins from the oven (but don’t shut oven off), and distribute the other half of the chocolate chips on top of each muffin.
Place  the muffins back into the oven and bake for an additional 2-5 minutes, or until a toothpick comes out clean. *Note, you could skip this step by putting all of the chips in the batter, and baking the muffins for 12-15 min straight, but this method gives the muffins the traditional ‘VitaTop Muffin’ look with the chocolate chips on top!
Cool muffins before removing from pan. ENJOY!!!
Servings: 12 Big Muffins or 24 Smaller Muffins
Calories: 116 Calories Per Muffin or 58 Calories Per Muffin

    These are very very good. I used 1/2 cup regular sugar because I didn’t have enough Truvia. Next time I will use it though. I also used chopped up Dove Dark Chocolate. Next time I will be better prepared. And there will definitely be many more times. I also used home made crock pot apple sauce from My Whole Food Life Blog.

    What do you mean by “I thought it wouldn’t hurt my belly, but it did!”? Did these give you a stomach ache? We have ‘stevia’ and I just ordered Navitas Naturals Organic Raw Cacao Powder from Amazon. This looks like a great recipe, so I was just curious about that statement! Thanks!

    Hi! I don’t know if you know this or if you calculated it into this, but a cup of splenda is actually 96 calories.

    Why not make a full size muffin then cut them in half to get the 58 calorie size? Saves time baking the smaller ones.
